There are several more recipes that I love, but I was too lazy to post anything more than my absolute favorites. If I’m being completely honest, I eat #1 on this list as often as humanly possible.

6) Single Serving Brownie

No, this doesn’t make a huge platter like the one in her photos (I think she doubles all her recipes??) but it makes a great single brownie. Make in a 1/2 cup ramekin, and then devour in 12 seconds. Repeat.

5) Brownie Batter Pancakes

Holy crap. Brownie batter alone makes me want to cry with joy. But combined with pancakes (everyone’s favorite breakfast) these become ethereal. You will probably have an existential crisis while eating these. What is the point of life if you can’t eat brownies and pancakes at the same time?

4) Chocolate Cupcakes

Good luck not eating all of these in one go. They are super soft and fluffy. If a little more yogurt is added than asked, they would be perfect. The final products were perfect to me, but others thought them to be slightly dry.

3) Cinnamon Roll

If you’ve read my cinnamon roll post, you would know how hard this itty bitty bun worked to get itself up to #3. Would be even more amazing if recipe was doubled and eaten straight out of the bowl like a cake. Dreamy.

2) Red Velvet Pancakes

Cake for breakfast? A childhood dream come true. These would maybe be at #1 if you added chocolate chips. Honestly, these taste like raspberries had a baby with chocolate cake. Please eat them.

1) Pumpkin Chocolate Chip Muffin

Chocolate Covered Katie is a goddess. Her hands can craft a perfect recipe better than anyone. This single-serving muffin is a perfect example. Shove a ton of random ingredients in a bowl, mix, and fill 1/12 of a muffin tin. Cook for 2 seconds and eat. Easy. So easy. Warm, gooey, yummy, perfect, orange, chocolate, chip, muffin…

Cinnamon Rolls- a journey

On afternoon, after a calm, relaxing browse of every Foodie Fiasco recipe ever created, I found a recipe for cinnamon rolls in a mug. The first time I tried them, I skimped on the apple cider vinegar. The result was a sticky mess of flour and cinnamon that was too ugly to photograph.

After I had simmered down and bought some vinegar, I tried them again. This time, the dough was nice and workable, but alas, I skipped the glaze. What a fool’s mistake that was. I ended up eating a dry ball of cinnamon and flour. Yum.

I tried again, prepared the glaze, and added cinnamon to the batter. It was good, if a little boring.

The final time, it was perfected. A truckload of cinnamon was added to the batter, and glaze was not poured, not drizzled, but dunked on the cinnamon roll. Oh, and an extra sprinkle of cinnamon on top.

4) Oatmeal Pancakes

These pancakes, though lowest on my list, are actually quite good. Though bland in taste, I’m sure, with some strongly-flavored toppings (fresh fruits, especially berries, are recommended), these would be amazing.

3) Cinnamon Pancakes

This recipe is written so that it can make a stack of boring, common pancakes. As a topping-hater and pancake enthusiast, I enjoy these pancakes plain. I add way too much cinnamon and too much sugar and get the most delicious cinnamon sugar pancakes!

2) Brownie Batter Pancakes

Don’t even try to disagree. Brownie batter is better than brownies. Brownie batter pancakes are even better than brownie batter. Gasp. Screams of disbelief. Nothing is better than brownie batter, you say.

Push those thoughts away. These pancakes are so delicious, they don’t need any toppings. A few crushed raspberries may be good, but they are definitely not necessary.

1) Red. Velvet. Pancakes.

Please. Go make these. These are infinitely better than any bisquick dough patties you will ever eat. Top with cream cheese frosting or cream cheese “syrup” (mix a tiny bit of cream cheese with a bunch of almond milk and a little bit of powdered sugar) and pour over delicious raspberry flapjacks.
